Hey Michelle, did you get to go? They changed the spice menu up and the gruyere souffle appetizer is no longer listed.

Here's what the New Times said about it:

"Put a crease in and a star atop Pascal's hat for his "twice-baked upside-down" cheese soufflé appetizer, so diaphanously dainty it was like inhaling a breath of Gruyère-perfumed air — shadowed with satiny Parmesan sauce."

Damnit, I never got a chance to go. And when I had the chance, I noticed the menu changed and said forget that!

Man, I hope that is an item regularly on their menu, because I sooooo want to try it. ::sigh::
